I'm gearing up for Thanksgiving baking and hope to have a bonus post in the next few days.
Ingredients
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup sugar
- 1 egg, lightly beaten
- 1 cup milk
- 7 tbsp butter, melted
- 1/4 tsp vanilla
- 3 apples, chopped
- 2 tsp ground cinnamon (for the cinnamon sugar)
- 6 tbsp granulated sugar (for the cinnamon sugar)
Directions
- Preheat the oven to 375, and grease a muffin pan.
- In a large bowl, mix together the flour, baking powder, salt and sugar.
- In a separate bowl, mix together the egg, milk, butter and vanilla.
- Mix the wet ingredients into the dry ingredients, and mix in the apples.
- Spoon batter into each muffin cup until it is mostly full, then add a layer of cinnamon sugar.
- Bake for 12-15 minutes, let cool.
